This Leftover Thanksgiving Sandwich is not your everyday Gobbler. No! It’s not just a rehashing of Thanksgiving on a bun! It’s a thing of its own. There’s no Black Friday shopping that could be this exciting, so stay home and enjoy your leftovers!
Ingredients for 2-4 servings:
2 Tbs cider vinegar
1 tsp celery seed
½ tsp black pepper
2 tsp sugar
3 oz. roasted Brussels sprouts, (~¾ cup) shredded
3 oz. roasted broccoli, (~¾ cup) sliced very thinly
3 Tbs Summit County Seasoning
½ loaf of unsliced, seeded rye bread
4 Tbs butter
8 oz. turkey breast
2 oz. cheddar, shredded (½ cup)
¼ cup (packed) chopped, cooked bacon
6 oz. roasted pear (from 1 med-to-large pear)
½ tsp. mandarin zest
How To Do It:
- In a small bowl, mix vinegar, celery seed, pepper, and sugar until sugar dissolves. Mix in sprouts and broccoli. Set aside for 15 minutes.
- Meanwhile, in a very small bowl or a cup, stir together the mayo and Summit seasoning.
- Slice the middle out of the bread, leaving large, ½-inch thick top and bottom pieces. Reserve the middle for another use. Melt butter in a large skillet over med-high heat. Lay the slices into the skillet and toast them until well-browned, about 4 minutes, moving them around frequently to promote even browning.
- Meanwhile, lay the turkey into an 8-inch baking dish. Cover it with cheese. Sprinkle with bacon. Broil until cheese melts and begins to brown. (Timing will vary; check frequently.)
- To assemble the sandwich, mound the sprout mixture on the bottom bread slice, top it with pears, sprinkle that with mandarin zest. Lay the broiled turkey-cheese-bacon on top. Slather the top bread slice with the seasoned mayo.
Notes:
- This’d be an absurdly large amount for two servings, but I could imagine it. Three or four would be much more reasonable.
- You can use 6 oz. Brussels sprouts and skip the broccoli. You can also use raw sprouts instead of roasted.
- Instead of the Summit County seasoning, use a poultry seasoning.
- You can, of course, use any bread you want rather than the rye. A rustic white would be lovely.
- If you’re using leftover, home-roasted turkey – which is what this recipe is intended for – cut the slices as thinly as you can manage.
- Poached pear would work just as well, of course, and so would a raw pear if it were soft and ripe.
- Of course you can substitute orange zest for the mandarin, you plebian.
Sure, you could make a more traditional sandwich with cranberry sauce (and if you’re going to, I’d suggest you check out Josh Elikin’s). But this veggie slaw and seasoned mayo are really great.

That is my kind of sandwich, it looks so good. I have to ask my sisters-in-law ( she is cooking this year) for some leftover turkey.
That’s the one drawback of having someone else make the turkey.
Never in my life have I seen a sandwich reach this proportion. I’ll need a knife and fork and I’ll still have to lick my fingers clean at the end. GREG
