With the addition of a couple extra veggies, you’ll turn your leftover pot roast into sandwiches in hardly any time at all.
Ingredients
⅔ lb. leftover pot roast
1 Tbs olive oil
1 green bell pepper, stem, ribs, and seeds removed, thinly sliced
1 onion, quartered, peeled, and thinly sliced
½ cup mushrooms from leftover pot roast
½ cup sauce from leftover pot roast
8 slices of rustic bread, or 4 six-inch French rolls, split
4 slices of cheddar, provolone, or American cheese
Directions
- Thinly slice the pot roast. Set aside. Preheat the broiler.
- Heat olive oil in a large skillet over a med-high flame. Add the pepper and onion; cook, stirring frequently, until slightly softened, 6 minutes. Stir in the beef, mushrooms, and sauce. Reduce heat to as low as possible and cook until the beef is heated through, 2 minutes. Meanwhile, toast the bread, optionally.
- Spoon ¾-cup of the beef mixture onto a bread slice. Repeat with 3 more bread slices. Top each sandwich with cheese. Broil until the cheese melts, 1 minute. Top each sandwich with a second slice of bread.
The backstory
This recipe was inspired by a Weight Watchers cookbook[1] whose tagline is something like “make this, then that,” which is an oft-neglected mantra that the home cook must weave into daily life. Basically, it presents pairs of recipes, where the second of each pair uses leftovers from the first. This particular entry from that book makes something that is not wholly unlike a Philly cheese steak, using leftover pot roast. I’ve un-watcherized it, for your caloric pleasure. The result is a very delicious, very messy sandwich, in all the best ways.
Social Learning
When I was a kid, I used to put ketchup on leftover pot roast. Now and then, I still do, just for a bit of nostalgia. Most often though, I will shred the leftover roast and toss it with the sauce and leftover veg. This disguises any dryness that may be the result of reheating, and it couldn’t be easier. But making sandwiches from the leftovers seemed like a good thing to try. It takes a bit of effort, but it’s fun and a great creative outlet. I was pleased with this faux-Philly version, but there are so many possibilities. Think smoky leek marmalade and horseradish mayo, or chipotle-honey mustard and sriracha. Or add sliced, leftover roast to a grilled cheese, maybe with chopped pepperoncini.

With those ingredients, good eating is guaranteed. By the way, in the Philadelphia region, which is where I live, roasted/chopped up chicken sometimes is substituted for beef to create chicken cheesesteaks. I like them a lot.

Ah, as much as I loved the Man! What a Pot Roast!, I think I might enjoy this even more. A good sandwich – especially one on French bread – is difficult to beat. I’m glad you unwatcherized this one for us. If you’re going with this kind of comfort food, just go all in – don’t leave me disappointed!

I have to say that I laughed out loud when I read this was inspired by a Weight Watchers recipe. Of course, reading further, I saw the mantra and it made sense… but pot roast, cheese, bread didn’t scream WW at first! The sandwich looks great, Jeff, and I was wondering what you were going to do with all the leftover pot roast. I also liked “messy in the right kind of way” – like tomato mayo sandwiches eaten over the sink in the summer, with the mayo dripping out…

Whaaat? It’s not an exaulted dish. But when it’s done right, it is one of the quintessential comfort foods. In Australia, what do you do with tougher cuts of beef that need low, slow cooking?

Jeff, your sandwich looks wonderfully comforting. I used to love to take the leftover pot roast, gravy, veggies and mix them up with mashed potatoes. Then heat it all up and serve with a side of lingonberry jam. But, your sandwich looks like a much tastier way to consume the leftovers…

Now that’s a man’s sandwich for sure. Perfect way to use leftovers from your scrumptious pot roast. Pouring some of the sauce on it to soak the bread takes it far beyond a beef roast sandwich. Now the husband wants to cook a pot roast.

What a great looking sandwich, a perfect use for leftovers. When we had the cottage, I was always able to stretch one meal into two reinventing the leftovers, it’s a great way to take the pressure off when entertaining over the weekend. Now I’m thinking of pot roast sandwiches.

Do you actually have any leftovers from your pot roast Jeff? The thing is ,this looks delicious (and its a weight watchers receipe? Wow!) so next time I do pot roast I’ll need to make sure we actually leave some. There’s usually none left after Lynne and I have devoured it and picked at its remains!

The recipe I used for pot roast uses two roasts, to deliberately make sure there’ll be leftovers. This is based on a Weight Watchers recipe that I came scross, but I departed from it.
This looks like a great lunch box recipe to me, if you can cut those veggies ahead of time, you just have to put them together in the morning, I’m going to bookmark this, thank you!
