If you have the sauce ready-made, you can whip this up on a whim.

  • If the gochujang’s been refrigerated, microwave it to loosen it up and make it easily spreadable. Set aside.
  • Pre-heat the oven to 375˚F. Place a 12-inch, cast-iron skillet over an ultra-high burner with a high flame (setting 7 of 9) and set a timer for 3 minutes. Turn on the overhead fan. Add the oil, and wait until it shimmers, a few seconds. Swirl the oil in the pan, lay the chicken into it, cover the pan with a spatter guard, and lower the temperature a few notches (setting 5). Leave the chicken undisturbed until it’s deeply browned but not burned, 5-7 minutes.
  • Flip, brush generously with sauce. Take the chicken’s temperature. Transfer pan to oven and change the oven’s setting to broil. Check every 3 minutes, rebasting as you do, until the chicken reaches 165˚F.
  • If there is extra sauce, spoon it onto the plate along with the finished chicken, optionally.

    I used a gochujang sauce for this chicken, and not stright-up gochujang. Making the sauce takes a bit of doing, but once you’ve got it around, you can use it quickly and easily not just as a BBQ sauce, but in many other ways.

    This is the best barbecue I’ve made without going outdoors. The broiler gave it just the right amount of char. Once you cut open the chicken, it’s juices blend with the sauce in the most fantastic way.

    2. I am not really familiar with gochujang sauce, but I’ve checked the recipe on your blog, and it sounds quite tasty – sweet and spicy and generally quite complex. So I bet I would like these chicken breast, too – they look great!

    3. So. Much. Flavor. I love it! I have to admit that using the broiler for chicken isn’t on my radar. But it’s cold outside, and my grill is covered with snow. This would be a great way to get that BBQ feel without having to put on my snow boots. Love it, Jeff!

    6. This is timely as I’m having a love affair with gochujang right now. I have never made the sauce, so I should probably do that first and have some in the refrigerator. What amazes me about the paste is that it is hot but so full of flavor! And, using it, no one could ever call your chicken boring.
