Rice Pilaf with Nuts and Dried Fruits
in an Instant Pot

Ingredients
1/3 cup shelled pistachios, chopped
1/3 cup almonds or pecans, chopped
1 Tbs butter or olive oil
2 garlic cloves, minced
1/2 small onion, finely chopped
1.25 cups long grain brown rice
1/4 tsp cinnamon
1/4 tsp cardamom
1/4 tsp black pepper
1/8 tsp cumin
1/8 tsp turmeric, optional
1.75 cups vegetable or chicken broth/stock
1/2 cup raisins
1/4 cup finely diced dried apricots (from ~6 apricots)
Finely chopped parsley, for garnish, optional
Directions
- Set the Instant Pot to SAUTÉ, more, 30 minutes. When you get the “hot” indication, add almonds and pistachios. Toast lightly, stirring constantly but quite casually, until the nuts darken and smell wonderful, 2 minutes. Immediately remove nuts from pot.
- Add butter to the pot and melt it. Add garlic and onion, and sauté until translucent, 3 minutes.
- Add rice; stir for 30 seconds.
- Add spices; stir for 30 seconds. Add broth, raisins, and apricots; stir for 30 seconds. CANCEL the sauté.
- Twist on the the lid. Set the pot to RICE, more (time), low (pressure); natural release for 10 minutes.
- Remove lid, and use a fork to fluff rice by slipping the tines down into the rice alongside the edge of the pan, and gently lifting and tossing the rice toward the center of the pan. Continue this process as you work your way around the perimeter. Add most of the nuts; toss.
- Transfer to serving bowl. Garnish with remaining nuts (and a little sprinkle of parsley).
Notes
- Substitute another aromatic for the onions, such as carrots.

I’ve become a huge fan of rice pilafs with chopped nuts – I usually go with dried cranberries and chopped pecans. If I ever get an instant pot, I’ll know where to go! 🙂

Wow Jeff, this is such a great recipe. I love the spices of cinnamon, cardamom, and cumin and so many other goodies in this pilaf. I might even make it. It sound really good to me.
