This Instant Pot recipe for homemade Orange Nutmeg Goat Milk Yogurt is so easy, and so good!
Orange Nutmeg Goat Milk Yogurt in an Instant Pot

- For the yogurt:
1 quart goat milk
1 quart ultra-pasteurized whole milk
1 small (5.3 oz.) container plain active-culture yogurt
Grated peel from 1 large orange
Nutmeg, for garnish
Directions
- Pour 1/2-cup of water into the Instant Pot and swirl it around to coat the bottom and the sides, then pour the water out, but don’t dry the pot. Pour in both milks. Set the pot’s YOGURT function to boil (see notes). Once the cycle has finished, remove the lid, remove the inner pot from the cooker base, and set the inner pot on a rack. Cover the top of the pot with a plate. Allow to rest until the milk cools to 100-115°F or less, about 1 hour. (Discard any skin that might have formed on the milk’s surface.)
- Ladle a cup of the cooled milk into a medium mixing bowl and throughly whisk the yogurt into it. Whisk this mixture into the pot. Place the inner pot back into the cooker base, secure the lid, and set the YOGURT function to normal (12 hours).
- Pour the yogurt into a tighly sealable container and refrigerate.
- Once it’s been refrigerated nestle a strainer or colander lined with coffee filters into a mixing bowl. Add the yogurt, cover, and allow to strain in the refrigerator until it reaches a Greek-style thickness, 4 to 6 hours or more. Discard strained-out liquid. Scrape the yogurt into a sealble container. Stir in orange peel. Cover and refrigerate.
- Just before serving, dust lightly with nutmeg.
Notes
- I developed this recipe for a six-quart Instant Pot. If using a different size or type of pot, you may need to make modifications. On my pot, you set the YOGURT function to boil by pressing the YOGURT button repeatedly until the screen reads “boil.”
Social Learning
If you’re familiar with the taste and rich texture of goat cheese, yogurt made from goat milk has that flavor and that same, rich quality. But because I’ve blended it with cow milk, you those qualities are deliciously subtle.
This yogurt needs no sugar – and I say that as someone who loves sweetened yogurt. If you feel differently, or you’re simply in the mood for something sweet, stir in some maple syrup before dusting with nutmeg.
The yogurt is great as soon as you’ve stirred in the peel, but as it sits in the fridge, it simply continues to get better. As time goes on, the orange flavor starts to overshadow the goat flavor, but never completely.
One of the ways I like to change things up is to stir a heaping spoonful of homemade caramel sauce, straight from the fridge, and a generous amount of shelled, toasted pumpkin seeds, straight from the freezer, into a serving of this yegurt. Especially if you make your caramel on the dark side, it pairs with the toastiness of the seeds and the tanginess of the yogurt especially well.
