Just like my previous lunchbox post, there are too many desserts in Adult Lunchbox 2. I’m starting to see why my pants are too tight around the waist. Also, just like Lunchbox 1, all of these things are good cold or at room temperature.

Fall Update

It’s the end of another summer. During the summer, I go out for lunch. Every. Single. Workday. And unless it’s raining, I always eat outdoors. I don’t care how hot it is. I don’t care if I can’t find a shady spot (although I do try hard to get one). The day after Labor Day, though, I start bringing my lunch to work, and will continue to do so until June.

I had my first PSL the other day. Another fall ritual. Yes, they offer them at the end of August, which isn’t fall. But just ask the ferns, the goldenrod, and the few trees that seem to be early to the punch of color. It kind of is the turning of the page of the first chapter of fall. PSL doesn’t really work as a ritual. The first PSL you ever have is amazing, but subsequent PSLs slide down a gradual but never-ending scale of … not much “disappointment,” but increasing underwhelmingness. I didn’t finish my grande, so I put the remainder into a small glass jar, screwed on the lid, and noted that it looked exactly like a jar of paint. It’d make an awesome wall color.

I went to Culver’s for the second time in maybe ten years just to check if I still don’t understand why butter makes it better, and had a pumpkin spice shake that tasted exactly – and I do mean “exactly” – like a pumpkin pie.

    We had a lousy summer with lots of rain…yesterday summer finally returned…I hope it stays for another week or so.

    • Pumpkin spice latte. I’m sorry to hear of your rainy summer! I often like the changeover from summer to fall more than summer itself, so I’m hoping that you have a nice one.

  2. I misssed Adult Lunchbox 1, so thanks for linking that. So many things look good, and look like worthy additions to my repertoire. Too much time inside during our ghastly heat has added a few pounds that need to come off, and there are plenty of things here that will make that easier. The dressings look particularly good here, and that baked oatmeal in #1 will be tried very soon!

    • Oh yeah, that oatmeal! It was so good. I stayed on that kick for quite some time, and I’m eager to get back to it.

  3. I totally know what you mean about the disappointment – or maybe underwhelming – capacity of pumpkin spice. I always get excited about it…and I’m excited for pumpkin spice season to return as I write this. But I always get over it pretty quickly, too. Oh well. And I agree with you on the butter – what am I missing here!? Oh well. Bring on the packed lunchboxes!!

  4. Our living room color is actually “Pumpkin Spice,” painted such in 2006. Was that before or after the PSL craze? We wouldn’t know as neither of us drinks coffee.

    Eating outdoors for lunch is a great joy, although we do the opposite in Arizona… starting in October, outside victuals are de rigueur… I usually made it through graduation, though we got a couple of 100° days in April. Now (extremely happily) retired, we have breakfast outside every morning in the summer and then lunches and dinners start happening in October.

    I do like your lunchables for adults, especially the number of desserts. Right now, we are dieting so no desserts for us. My personal charge is to make food that is light, healthy, filling, and flavorful… as you know, that’s not the easiest. Happily, my posts are written through December, so I have time to figure them out. I popped one in the other day — the salmon — so you may see more!

    • I bet that pumpkin spice color goes beautifully with the dessert pallette. And yes, when I say I bear the summer heat, I’m talking about the mid 80s! I’ll be joining you in that eating lighter phase, I think.

  5. Ohhhh. I had no idea what a PSL was! I think it’s funny that there’s no pumpkin spice. There’s no eggnog “flavor” either. It’s all cinnamon and cloves and allspice and nutmeg!!!

  6. For Eva and I, summer also means dining out daily and always outdoors. At home, when it warms up, we move from our kitchen dining room to our outdoor dining room until the chill chases us back in.
    As for your lunch idea, fried chicken, and corn salad would work for me…

  7. As soon as the pumpkin flavored items start showing up, the rest of the year just seems to fly by. I need to find a pumpkin spice shake, that sounds amazing! Almost as amazing as the beautiful lunchbox items you’ve pictured above. Everything looks great! The Private Oatmeal Cookies and Lemon Bars look particularly addicting!

  11. I actually skipped the PSL train when it pulled into Starbucks in August. I used to love them, but I’ve been feeling underwhelmed with them myself the last few years. I will head to Culvers and get a shake though. That sounds amazing! The adult lunchbox ideas look mighty tasty! I’m wanting some lemon bars and an avocado sandwich now!
