These fudgy chocolate budinos have a ganache-like texture. I suspect they may not be authentic, but I know that they’re delicious.
Chocolate Budinos

2-oz. servingsIngredients
5 large egg yolks
2 cups heavy cream
1/2 cup sugar
pinch of salt
11.25 oz. (2 cups) bittersweet chocolate
Caramel sauce, for service
Whipped cream, for service
Directions
- In a medium-size saucepot, break the eggs up with a whisk. Whisk in the cream. Whisk in the sugar and salt. Place over medium heat (setting 4 out of 9), and stir continuously with a flexible spatula – making sure to constantly scrape the bottom, side, and edge of the pot – until the mixture is thick enough to coat the back of a spoon (180°F). Off heat.
- Whisk in the chocolate chips until the pudding is one solid color with no lighter streaks, then continue to whisk for 100 strokes.
- Pass the mixture through a fine mesh strainer. Pour the mixture into ramekins and transfer to the fridge. Allow the budinos to set in the fridge for 2-3 hours.
- Serve topped with caramel sauce and whipped cream.
Notes
- Substitutions: semisweet for the bittersweet chocolate.

Social Learning: Tips and Tricks
When I say “2-oz. servings,” I mean, “moderately fill a 2-oz. ramekin.”
I’m not quite sure how I feel about the caramel sauce. It takes this dessert into the candy bar territory. I’m not sure if that’s a good thing or a bad thing. As I’ve matured, I’ve become a whole lot less interested in candy bars, but I’m not sure I’m “normal” in that regard.
The whipped cream, on the other hand, is a good idea. I can’t explain why pure fat seems to balance out the richness of a fudgy ganache, but it does.
The Backstory
I have to confess to you that I’m not sure what a budino is. I’ve never had one. I stumbled onto a recipe for one. Then, in searching out other recipes for comparison, I discovered that few of them seem to agree on the ingredients.
I was expecting this to be some kind of a pudding, but what I wound up with reminds me more of a fudgy ganache. It’s softer than a ganache, but a similar texture and flavor. It would make a fabulous tart filling. It’s enjoyable straight from the fridge, but better closer to room temperature. It’s intense, so a little goes a long way.

I make an Italian chocolate budino called a Bonet — it does include a caramel layer, much like a flan, so the pairing does seem to be authentic. Maybe just a little?

Hmmm. I have to admit that I too was unfamiliar with a budino…but I clearly need to introduced. These seem somewhat similar to pots de creme? They look like a fancy, sophisticated style dessert…but one that’s super easy to make, too.
Sort of like a pot de creme, but more ganache-like. I have a feeling that maybe a true budino is supposed to be more like a pot de creme. But I’m not sure.

Just look at how creamy and luscious that chocolate cup is, the perfect ending to one of your delicious meals. We had something similar just recently in Dublin at Guinness’ 1837 restaurant. They paired it with a raspberry coulis which they unfortunately didn’t strain the seeds out of (I just hate the seeds getting stuck in my teeth). Your caramel sauce would take it to the next level.
