Balsamic Vinaigrette

Ingredients

  • 2 Tbs balsamic vinegar

  • 2 tsp honey

  • 4 tsp Dijon mustard

  • 1/4 tsp of oregano

  • Pinch of red pepper flakes (optional)

  • 2 garlic cloves

  • 1 oil-packed sun-dried tomato (optional)

  • 6 Tbs extra-virgin olive oil

  • Salt and pepper

Directions

  • Put everything but oil, salt, and pepper into the bowl of a food processor fitted with the metal blade. Turn the machine on to high speed, and add the oil in a slow, steady stream. Scrape down the bowl and process for a few more seconds. Season with a pinch of salt and pepper.

Notes

  • Substitutions: dark brown sugar for the honey, old-fashioned mustard + a hit of horseradish for the Dijon, spicy brown mustard for the Dijon, 1/4 of a medium shallot or 1/8 tsp garlic powder for the fresh garlic

Althought this recipe is easily halved, that amount may be too small for some food processors. In that case, for a different but still good result, whisk by hand or shake in a tightly sealed container.

This dressing’s thick texture is like satin. It coats and clings to vegetables like crazy. It’s deep, dark, tangy, and sweet with slight sharp notes.

  5. A great salad dressing is always good to have, I cannot remember the last time I purchased dressing! This one will be a repeater for sure. I am a little surprised with the honey as I’ve always thought balsamic is rather sweet on its own, but maybe it depends on the age of the vinegar.

  8. This is how I make mine, too! I honestly don’t make it enough though, because I usually do my salads the Italian way (no premade dressing.) Now I’m longing for a salad with balsamic vinaigrette! 🙂

    • Gotcha! For me, so much of cooking is about meal prep. On most weekdays, I take my lunch to work, and I love to bring salads, so I need to make the dressing ahead of time, and keep it separate from the greens.

  9. Homemade dressings are always the best – and they are usually shockingly easy to make. I’ll have to give this one a try! I might sub out the sundried tomato for sundried tomato pesto…mainly because we have 1/2 a jar in the fridge and I’m trying to figure out how to use it. Haha!
