A recipe for Cinnamon Honey Butter. The secret ingredient is vanilla. (I can’t believe I gave that secret up right up front. I should’ve at least made you click or scroll for it. I’m so bad at internetting.)
Cinnamon Honey Butter

cupIngredients
2 sticks butter, room temperature
1/3 cup + 2 Tbs honey, plus more to taste
1 tsp ground cinnamon, plus more to taste
½ tsp vanilla
Pinch salt
Directions
- Beat butter on medium speed until smooth, 20-30 seconds. Beat in half the honey and half the cinnamon until the color of the butter is homogenous. Scrape down the inside of the bowl. Beat in remaining honey in a similar fashion. Add remaining cinnamon, to taste, beating thoroughly. The cinnamon and sweetness should be moderately subtle, somewhat pastel. Beat in vanilla. Taste again. Adjust cinnamon and honey if needed. Beat the honey butter breifly by hand, to ensure that it’s completely blended.
- Serve at room temperature. Refrigerate for long-term storage.

Spread it on bread, pancakes, or waffles. You can use it to make caramelized sweet potatoes or you can serve it next to chicken that you’ve seasoned with rosemary and thyme.

The vanilla is the secret ingredient. It takes the butter from something kind of ordinary to something kind of special.
The flavors here are clear, but they don’t jump out at you. If you’re looking for something more intense, you could add more honey and/or cinnamon. Or, you could start the recipe out with only one stick of butter, follow the directions after that as-is, and then in the final tasting stage, add more butter if what you have is too intense.

I used wild honey. There’s a market near me that gets it in bulk from a local beekeeper. If I didn’t have access to that, I’d use clover honey. Although I’d definitely experiment with any honey I liked!
