Cherry Chocolate Cottage Pudding is “pudding” in the English sense of a sticky cake, or pudding cake.

This pudding is filled with a pleasant, contented, folksiness … well as the subtle, sweet, low tones of black cherry. The cake is chewy around the edges and holds up perfectly against the cherry sauce in which it’s soaked. There’s just enough chocolate so that you come across it regularly, and its rich headiness seems a constant surprise. Be sure to give the ice cream time to soften, so that its texture will complement, rather than contrast, the pudding.
This pudding’s sauce is made from cherry juice. If you want to up the cherry flavor, or give it more depth while spending a whole lotta money, swap out some (or all) of the water called for in the sauce recipe with Cherry Marnier, Crème de Cerise, or Kirsch.
Serves 6
Ingredients for the Cake:
7¼ oz. sugar (1 cup)
1 oz. butter, softened (2 Tbs)
1 egg
3½ oz. flour (1 cup)
⅛ oz. baking powder (1 tsp)
⅛ tsp salt
4 oz. whole milk or buttermilk (½ cup)
½ oz. bittersweet chocolate chips (½ cup)
1 can (15 oz.) cherries in syrup, drained, juice reserved
Ingredients for the Sauce:
Juice reserved from cherries, plus water, to bring the total to 8 oz.
7¼ oz. sugar (1 cup)
¼ oz. flour (1 Tbs)
½ oz. butter (1 Tbs)
⅛ oz. vanilla (½ tsp)
Unsweetened freshly whipped cream or vanilla ice cream, for serving
Directions:
- Preheat oven to 325°F. Generously butter a square 9″ x 9″ glass baking dish.
- Cream sugar and butter. Add egg and mix well. Whisk flour, baking powder, and salt, then add to the butter, alternating it with the milk. Add chips and cherries and mix gently. Pour batter into pan. Bake for 40 minutes, or until deeply browned and set in the center.
- While the cake is baking, make the sauce by combining juice, sugar, and flour in a small saucepan. Bring to a boil, then keep at a lively simmer for 8 to 10 minutes, or until thick. Turn off heat and stir in butter and vanilla.
- Drizzle ⅓ of the sauce on the cake as soon as you remove it from the oven. Let it soak in for 10 minutes.
- Cut the cake into squares, or spoon out pieces. Top with more syrup and garnish with whip or ice cream.
